What better way to brighten up this cold and dark February than a lovely winter wedding catered by yours truly, Hog Roast Castle Donington!
Francesca and Matthew had been planning their February wedding for almost a year and Hog Roast Castle Donington had been with them every step of the way. In fact, Matthew called us just hours after proposing as he knew Hog Roast Castle Donington were the perfect caterers for their big day ever since we catered at his works Christmas party a few years back. We were flattered to be the first caterers to come to mind and had been working tirelessly to make sure all went smoothly on the day itself.
We arrived early morning to set up our Hog Roast Castle Donington machine and get the food prepared whilst the ceremony was taking place. We had a serve time of 3 o’clock however a hog roast takes time if you want the meat to be the most succulent it can be and so we always like to arrive early when possible so that we can ensure only the best results. With approximately one hundred and fifty guests we had our hands full! As always, the first job is to prepare the meat. Francesca had chosen to go for our classic whole roasted hog with all the trimmings as well as a leg of lamb and several spit roasted chickens so that hopefully there would be something to suit all tastes. We scored the hog and applied lots of sea salt which we massage in to help create that mouth-watering crackling guests go crazy for! For the lamb we seasoned it with lots of rosemary and fresh garlic which we would also use to season the roast potatoes. The chickens had been marinated overnight in a special Hog Roast Castle Donington Cajun rub so for those we just had to load them on the machine and keep an eye on them until serving.
Three o’clock quickly approached, and we got to work to serve up the best winter warmer wedding Hog Roast Castle Donington!
